Take a ripe coconut — the bigger, the better. Make a small hole, pour the rice inside, and place the coconut on hot coals. Important: don’t put it directly into a strong flame. It works best on coals, so the rice slowly cooks and the coconut doesn’t burn too fast. After about an hour, the water inside heats up, the rice absorbs the coconut moisture and sweetness, and you get a delicious porridge with a light coconut flavor.
