Inside the walls covered in bullfighting photos and traditional Spanish décor we ordered three classic Spanish dishes that Americans almost never try — jamón ibérico, boquerones en vinagre, and gambas al ajillo. Three dishes that have been served in traditional Spanish bars for centuries. We had no idea what we were walking into. The jamón ibérico arrived thinly sliced and glistening on a white plate — cured for months from free-range Iberian pigs. The boquerones were white anchovies marinated in vinegar and olive oil, fanned out beautifully. The gambas al ajillo arrived sizzling in a silver pan of golden garlic butter. Every single thing we tried stopped us in our tracks. This is what real Spanish food tastes like.
